Beginner Buttercream Cake Class

This class is an introduction to decorating with buttercream.

The class will cover

*Baking techniques & recipes
*Levelling & torting
*Stacking & assembling a cake
*Filling techniques
*Buttercream recipes & covering with buttercream
*Ganache drip
*Piping simple decorations

All tools & equipment are provided. You will take home a gorgeous buttercream cake to share with family and friends.

Sweet Tiers Potted Orchid Class

Yes it really is a cake! Come and join us to make this gorgeous, EDIBLE work of art in a single day!

 

 

Helena Kastanis brings her fabulous work with wafer paper orchids into this lifelike potted orchid cake. This entirely edible creation has many learning outcomes that can be applies across many designs – limited only by your imagination! this cake can be adapted to countless variations. The many skills you will acquire in this workshop will be utilised over and over again! Learn the methods of carving and covering 3D shapes out of cake, to the little details involved in bringing your flowers to life. In a relaxed, fun filled class, Helena will teach you all the techniques you need to make this cake – as well as apply to all sorts of designs in the future.

You will learn –
– Basic sculpting techniques
– Prepare your cake for carving – filling and proportions
– Consistency of ganache and the importance of a solid foundation – Ganaching a sculpted cake
– Marbling fondant and covering a sculpted shape.Creating flawless finish on a curved surface
– Wafer Paper Orchids: anatomy, cutting, veining, wiring and construction of your orchid,
– Introduction to airbrushing
– Composition and styling of your orchid
– Finishing touches – edible ‘dirt, roots and ‘glazing’ your pot.

All materials are supplied. You will take home a completed cake on a board. This class is suitable for all levels of cake decorators.

Petalsweet Masterclasses

with

Jacqueline Butler

In June/July of this year we are absolutely thrilled to be welcoming the amazing Jacqueline Butler from Petalsweet Cakes to teach two stunning flower masterclasses.

Masterclass 1 – Closed Peony, Climbing Roses, Dahlia

 

In this 2-day class, students will learn how to make a closed peony flower with a ruffled centre and tightly cupped petals, delicate little climbing roses and buds, and a beautiful dahlia flower. The peony is like an oversized bud, and perfect on its own or as a pretty space filler. The little roses are sweet in a stem but are also great to use individually as filler flowers. The dahlia is flirty and sophisticated and always a show-stopper. This is a great mix of flowers for learning a number of different techniques and finishes.

All tools & equipment are provided. Lunch and morning/afternoon tea are included.

Masterclass 2 – Heritage Rose, Apple Blossoms, Greenery

 

In this 2 day class, students will learn how to create a beautiful bloomed heritage rose and bud, adorable apple blossoms, and a mixture of delicate little berries and trending greenery. The rose makes a great statement flower, and the apple blossoms are beautiful in a stem or used separately as filler flowers. This is a great mix of flowers for learning a number of different techniques and finishes.

All tools & equipment are provided. Lunch and morning/afternoon tea are included.
